HOW I COOK MY OXTAIL IN THE INSTANT POT
My pioneer woman instant pot from walmart : OUT OF STOCK 🙁
Lay out the oxtail on a baking sheet and cover each piece with a layer of salt to help tenderize and flavor. ( You can rinse the salt off if you like before placing in the instant pot but I left it on mine and enjoyed how salty it was )
Allow salted meat to sit at room temperature for an hour to 2 hours.
Turn instant pot on “sauté” and add in 8 tbsp (one stick) of butter.
Add in fresh chopped garlic ( I used 6 cloves ) use as much or as little as you like.
Allow garlic to brown and then put in the oxtail and sear each side – after they are seared, take them back out and place to the side.
Once the meat is out you may want to add some veg. I added cabbage and onion to mine but it’s completly up to you what or if you add any veg. I let my veg cook down before adding bone broth.
Add in one box of kettle and fire bone broth (16.9 oz) You may use any bone broth, I used beef bone broth. If you make you own bone broth – even better. I then add a cup of water.
Allow broth to heat up and stir instant pot with wooden spoon to get all the flavors off the bottom of the pot from where the meat was seared.
Now add the oxtail into the pot and set timer for 80 min sealed cook time. Allow instant pot to slow release.
